Butternut Squash Soup
2014 has been a banner year for this popular crop at Green Earth farm. One of many tasty and nutritious ways to prepare these winter squashes is to make butternut squash soup. Jeremy DeRango, Executive Chef at Villa St. Benedict has a unique relationship with Green Earth Institute. Jeremy volunteered to make butternut squash soup so the CSA shareholders could sample it at an event on Tuesday. Jeremy will have printed copies of the soup recipe and other recipes using Green Earth's locally-grown organic vegetables to share with all.
